Ground Ostrich Bobotie

Ingredients
- 3 tsp sunflower oil
- 1onion, finely sliced
- 3 tsp curry powder
- 1 apple, peeled and cubed
- 1/3 cup apricot jam
- 4 slices white bread
- 1/2 cup of milk
- 1lbs ground ostrich meat
- 2 large eggs
Preheat oven to 200°C.
Heat a saucepan over a medium heat, then add the oil. Add the onion, curry powder, apple and apricot jam and cook for a few minutes.
Soak the bread in 1/4 cup of the milk. Add the ground ostrich meat and bread to the onion mixture. Stir until cooked through.
Transfer the mixture to an ovenproof dish. Beat the eggs with the remaining milk. Pour the egg mixture over the mince and bake in a preheated oven for 15 minutes or until set. Serve with rice and salad.
